Braunschweig: on page 28/29 of the quick start guide, where does it say "start button"? (I also searched for "start button" in the document but was unable to find. Similar in the Manual of Braunschweig) Hengelo: (page 86 of the manual) A "Start Button" is a button placed at the position of a signal. What a Start Button is, read page 16 (chapter 4.2.3.) to learn about these panel items.

You are refering to the Hengelo manual, without any doubt, and talking about the LMB + Start Button resp RMB + Start Button. As written by Richard, you have to understand what the Start Button is on the Hengelo panel. In short, the "big" buttons, with an arrow in it which will be unlit or lit (red or yellow) depending on if you have set a route, are the Start buttons. Press a Start button with LMB and then an End button to set a route (if available/possible). Press a Start button from where a route has been set using RMB to revoke an earlier set route. Page 16 of the Hengelo manual tells you about the various buttons on the Hengelo NX panel
